A region bursting with flavours and spices, there are so, so many delicious dishes on offer - here we recommend some of our top 10 recommendations!

Jamon Iberico - produced from Black Iberian pigs, is often referred to as the best cured ham in the world! With a unique flavour, this is a particular speciality in the Sierra de Aracena.

Huevos la Flamenca - popular in Seville, this tasty dish is a layer of baked eggs served in a clay pot with vegatables and a topping of Iberian ham. Definitely not just for breakfast!

Sopa de Almeria - served in the Costa Almeria, this is a type of soup served with monkfish, clams, prawns and red peppers - perfect after a long walk!

A refreshing tomato Gazpacho

Gazpacho - a cold soup with lots of variations served all over Andalucia. It may not sound appealing but trust us when we say that a refreshing bowl of gazpacho can't be beaten in the hot climate of sunny Andalucia! 

Pescaíto frito - often served at outdoor stalls during festivals, this fried fish is a real Andalusian speciality which uses high quality olive oil. 

Torrijas - particularly popular during Semana Santa celebrations, this sweet dish is similar to french toast with bread being soaked in milk or honey before being fried and drizzled with honey or cinnamon.

Mojama - a tapas dish consisting of salt-cured tuna most often served as an appetiser - perfect along with a refreshing Cruzcampo beer!

Caracoles - for the slightly more adventurous foodies, Caracoles are simply put, "snail tapas". Very popular in Seville, they are served with a delicious sauce featuring garlic, parsley, black pepper and cumin.

Patatas a lo pobre - potatos fried with green peppers and onions - simple but mouth-watering! 

Flamenquines - delicate little rolls made from jamon, goats cheese and vegetables before being covered in breadcrumbs and deep-fried.
